2013 Nordic Roaster Rules

The Nordic Roaster 2013 competition will be divided into 2 parts:

1. The ESPRESSO competition

2. The FILTER competition.

Roasters must compete in both competitions to be able to win the title: NORDIC ROASTER 2013. There are 10 roasters competing for the 2013 competition.

1. ESPRESSO COMPETITION

First part of the Nordic Roaster Competition is the Espresso competition. Here are the dates for it:

SEMIFINAL 1 DATE: 5th of September 2013
SEMIFINAL 2 DATE: 6th of September 2013
NORDIC ROASTER 2013 ESPRESSO FINAL: 7th of September 2013

JUDGES: 200 coffee professionals.

ESPRESSO COMPETITION RULES

Each roastery will bring 6 kilos of espresso coffee for the competition (+ calibration coffee). Also we need following information about the coffee:

  1. Specify that it is for the “ESPRESSO competition“
  2. Name of the roastery
  3. Name of the roast master
  4. Which coffee(s)? (farm name, washing station, variety, processing, procentage in blend etc.)

This information has to be sent to bbrend@nordicbaristacup.com before August 30th.

The competition coffees will be put in anonymous packaging and labeled A, B, C… and so on to keep the coffees blind.

The espressos will be brewed on Dalla Corte espresso machines DC PRO. The parameters on the machine cannot be changed. All machines are installed equally: 93 degrees Celcius and 9 bar pressure. The water used for the Dalla Corte espresso machines will be filtered through a reverse osmosis with blending capacity, Everpure MRS 600/HE device. Specifications to follow.

Each roast master can choose between a Dalla Corte DC1 grinder and a Nuova Simonelli Mythos grinder for the competition.

Participating roasters need to have one person present at the Nordic Barista Cup 2013 to calibrate before the competition. Roast masters will calibrate the coffee at 11.00 (45 min before the competition) and the wanted brewing parameters for the competition. The calibration will take place at the NBC event location. The times/address for calibration times will be released the week before the event.

After the calibration the roast master has to write the chosen brewing parameters on a piece of paper clearly stating following information:

Roastery name
Grams of coffee grounds in the filter (pr. double shot)
Grams of liquid espresso in the cup (pr. double shot)
Extraction time (seconds from button is pushed until it is stopped)
Which grinder to use? (DC1 or Mythos)

Your espresso will be brewed (blind) by the baristas from the national teams following your set parameters. Roast masters will not (either) know which team serves your coffee.

The 200 NBC attendees will be divided into smaller groups and will get their shot served by the teams at each station. The brewing and serving is a part of the national team competition, so rest assured that the espressos will be extracted perfectly by skilled baristas. The espressos will be served in paper cups in the 2 semifinals and in porcelain cups in the final. 

In total there are 10 roasters competing, meaning that coffees from 5 roasters will be competing in 2 semifinal rounds. After each semifinal the scores will be counted and the 2 top coffees from the semifinal round will continue to the final. Meaning that 4 coffees who scored the best in the 2 semifinals will go to the final. The 5th finalist will be the coffee that is the highest score of the remaining 6.

The winner of the Nordic Roaster 2013 Espresso Competition is the espresso coffee with the highest total score from the Espresso final.

After the competition we share all information about all coffees online along with the points from all parts of the competition.

JUDGING

The espresso coffee will be tasted blind by all attendees at the 2013 Nordic Barista Cup. Each person attending the Nordic Barista Cup 2013 will have one vote for each semifinal and one vote for the final.

The points from the Espresso competition will be added to the Filter coffee competition and count in the Nordic Roaster total score, where the roaster with the most votes in the 2 competitions will be awarded the 2013 Nordic Roaster title and challenge trophy. The trophy has to be returned to NBC administration at least 2 weeks prior to the 2014 NBC event. 

2. FILTER COMPETITION

DATE: 7th of September 2013
PARTICIPANTS: 200 coffee professionals

FILTER COMPETITION RULES

Each roastery submits 6 kilos of the competition coffee (potential calibration coffee not included in this). The coffee will be brewed after the roast masters preference on BUNN brewers. The filter coffee you bring is supposed to be sourced and roasted by your roast master. The combination of your coffee is optional; you can choose a blend or single origin. Each coffee bag must be labeled with following information:

  1. Specify that it is for the “FILTER competition“
  2. Name of the roastery
  3. Name of the roast master
  4. Which coffee(s)? (farm name, washing station, variety, processing, procentage in blend etc.)

This information also has to be sent to bbrend@nordicbaristacup.com before August 30th.

You can influence following parameters: grams of coffee pr. liter of water and the grind setting for the coffee as well as brewing profile on the brewers. Each roaster will have the opportunity to calibrate the coffee on the filter brewers during the day of the 5th and 6th of September. Please make your own arrangements with BUNN brewing instructor (Simon Green) for calibration.

When the roast masters have decided upon the brewing parameters of their choice, they need to label their coffee bags with the dose, grinder and grind setting of their choice and inform the certified BUNN brewing instructor about it in writing.

The coffee can be ground on a Ditting 804 grinder, a Eureka grinder, or a BUNN grinder set to a standard filter grind if nothing else is instructed. All coffees will be brewed after parameters set by the individual roast master, including coffee to water ratio, grind size, bypass % and brew time. The coffees will be “dialed in” together with a certified BUNN brewing instructor (Simon Green). The filter coffee will be brewed into 4 liter thermal servers using a BUNN I-C-B brewer at 92 degrees Celcius.

The water used for the BUNN brewers will be filtered through a reverse osmosis with blending capacity, Everpure MRS 600/HE device. Specifications to follow.

JUDGING

Each person attending the Nordic Barista Cup 2013 will have one vote. The coffee with the most filter votes will win the Nordic Roaster 2013 FILTER Competition. The points will be added to the ESPRESSO competition and count in the Nordic Roaster 2013 total score.

The roaster with the most votes in the 2 competitions will be awarded the 2013 Nordic Roaster title and challenge trophy. The trophy has to be returned to NBC administration at least 2 weeks prior to the 2014 NBC event.
